We’ve come to the part of the year when Meatless Mondays coincide with grilling season—and when full-time vegans and vegetarians are breaking out their grills, too. So we pulled together seven of our favorite meatless mains for BBQ season, from grilled eggplant salad to self-made vegan burgers.
These recipes are also correct for carnivores and omnivores to maintain access to once they invite buddies or their own family over for a cookout, which typically conveys an unstated promise of meat and frequently dooms vegetarians or vegans to a meal of facet dishes or fake meat merchandise. Not so with this delicious veggie food, which everyone else is bound to love just as much as the meat abstainers. And Nary, a frozen veggie dog, is in sight.
You may find plenty of sparkling vegetables, flavor-packed marinades and sauces, sparkling herbs, complete grains, and hearty cheeses like halloumi, fontina, and chèvre to make these smooth mains filling and complete in taste.
1. Grilled Halloumi and Vegetable Kebabs
Halloumi is a company of Greek cheese that you can honestly prepare dinner properly at the grill—thread cubes into skewers with greens like pink bell peppers and mushrooms, and you have a gorgeous update on the same old shish kebab. Hollowing zucchini halves and stuffing them with pro quinoa before grilling until smooth makes for a smooth vegetarian. 2. Grilled Tofu Torta
Save this one for Taco Tuesday (and call it Torta Tuesday); the tofu desires 24 hours to marinate in warm Mexican sauce to infuse it with taste virtually. Then, grill it up and stuff it into sandwiches with black beans, creamy avocado, and pickled jalapeños. Cotija cheese is optionally available if you want to keep it vegan. 3. Vegetarian Stuffed Red Bell Peppers
Sweet and smoky charred bell peppers are full of a spicy, tacky mix of Israeli couscous, greater greens, and tomato paste for a dish destined to be a brand-new summer fave. 4. Black-Eyed Pea Vegan Burgers

5. Grilled Flatbread with Potato, Chèvre, and Herbs
You can (and should) grill pizza, which this essentially is—we name it flatbread as it sounds fancy. The topping of mozzarella, goat cheese, herbs, and Yukon Gold potatoes is fantastic, but play with whatever combos sound best. 6. Grilled Eggplant Parmesan Salad
This is sort of a go among deconstructed eggplant parmesan (made on the grill, of the route) and Panzanella (bread salad). You’ll grill the bread, the eggplant, and the cherry tomatoes, then toss them collectively with sparkling basil, mozzarella par,mesan, and a tangy French dressing.
